The konpeito method was apparently passed down from the Portuguese to the Japanese and it is a long tedious process of a few days. You have to make this in a large spinning cauldron pot and add a little sugar day after day in a temperature controlled environment...I reckon you could make a visit to a konpeito shop in Japan and find out. I'm not too sure myelf, sadly!
