Got muffins?
I bet most of you agree the Americans sure know their pancakes and muffins. Cakespy recently posted up a showdown between the muffin and cupcake. For more questions and her awesome debate (and pictures) of this epic facedown, check out her site through the link above.
On days where I’m plagued with melancholic notions of ladylike etiquette and wishful thinking of being in a historic age with pretty dresses and handmade embroidered fabrics, I think cupcakes. On days when I’m utterly annoyed with such pretentiousness and really prefer the fuss-free and just down-to-earth contents of life, give me muffins. Either way, I have to say I love them both with equal passion and adoration. It’s just all an issue of balance between my emotions and tastebuds. O yes, and state of mind. Damn that I’m a libra and need all this yin yang, balance and peace shizzle.
When it comes to muffins, I need them explosive.
Explosive, volcanic, man-sized, Texas-sized all the way. I don’t know why. It seems like a prerequisite to me, otherwise I just won’t fancy eating it. In more ways than one, I believe this will be why boys may find me repulsive or probably just overcome with fear or competitiveness. Jokes. Honestly, if you’re gonna have a muffin, I order you to have a enormous one with alright then, a (I here say it quite reluctantly) petite cup of tea to wash it down.
My rules for consuming muffins:
1. it has to be at least a medium-sized muffin
2. you must have a hot, comforting cup of tea or coffee to accompany it
3. don’t bother with forks and plates unless you’re eating it straight out of the oven hot
4. don’t talk; just eat, will ya?
5. occasional moans of pleasure allowed

Well then, are you quite so particular with muffin-eating too?
This recipe yields 6 power muffins.
American Blueberry Muffins
Ingredients
- 1/2 cup butter, softened
3/4 cup caster sugar
2 eggs, lightly beaten
2 cups plain flour
2 tsp baking powder
1/2 cup buttermilk (or you can use a substitute of milk and lemon juice)
1 cup/punnet blueberries, tossed lightly in flour
Preheat oven to 200d Celsius.
Line muffin tray with paper cups.
Beat butter till creamy. Add the sugar and lightly beat it together. Add a beaten egg to the milk and gently mix into the creamed sugar and butter. Add the next egg.
In a separate bowl, whisk together all the dry ingredients.
Carefully mix the dry ingredients into the wet ingredients, make sure not to overmix. You want the batter lumpy and it’s alright to see bits of flour. Fold in the blueberries and spoon generously into muffin cups.
Place tray in middle rack of oven. Reduce oven temperature to 190d Celsius. Bake for 25-30min.
At the mark of the last 5 minutes, reduce oven temperature again to 180d Celsius.
Voila. Fluffy muffins with a lovely crunchy crust top. Ultimate.

Perfect! You nailed it - this recipe is perfect for eating right out of the oven since it yields only 6. You won’t have to deal with any extra muffins getting lonely & cold.

P.S. I doubt any man could possibly find you repulsive. Alfredo always claims that he really fell in love with me when we went out to eat & I didn’t hold back from enjoying the meal. He thought taking a girl out to dinner just so she could poke at her food was repulsive. So, always enjoy!
Blueberryyyyyyyyyy - EXACTLY!!! They are THE berry of choice, in my mind. Girl, we could totally eat a muffin together, over tea, speechless. Love them fresh out of the over, still warm.
And, any man who can’t appreciate a woman who eats - is no man at all.
Good heavens! That looks delish! Don’t sweets match well with jewels? <3
Those blueberry muffins look really good. Blueberry muffins are one of my favorites. I am looking forward to the berries and making some muffins this summer.
Actually, I prefer to (prepare to gasp) have my muffins approximately normal-sized. GASP!!! It’s because they give the greatest muffin top and caramelization:muffin insides ratio. But blueberry… that’s just a no-brainer! A classic flavor! Beautiful muffins diva!
LOL! So what makes this “american”? Y’all have a funny idea of what it is to be American over there (said with my best drawl) ;-P
gorgeous man-sized muffins! [i say “man-sized,” but i could just as easily say “real woman-sized” because i can outeat many of the men i know. :)]
oh, and rule #5 is definitely important!
Yummy! Western breakfast food. How I miss it!!
I was just watering my blueberry plant that I am growing in my Kyoto garden and I think that the ravens ate more than half of the unripe blueberries off of it! Dang!!
Love your muffins!

My husband always said one of the things he liked about me was how much I loved to eat. No puny little muffins for me!
I will have to try this one. I have never made a recipe with buttermilk that I didnt love.
Those muffins are just BEAUTIFUL. (I have tears in my eyes). I could eat a blueberry muffin like that every day and not get tired of it. Great job, Diva!
And this is just how muffins should be…everything is right about ‘em!! You are quite like my DH…forever trying to balance his Libran scales; also, this is just as he likes his muffins…Texas, king-size & explosive!!! YUM Diva, YUM!!
I love how high they look! Beautiful!
Gorgeous - I love blueberry muffins!
Wow, you have beautiful muffin tops! Not sure I’ve ever complimented anyone in that way, but I like it. I’m all about the jumbo sized muffins.
MMMM.MUFFINS! I looooove a good blueberry muffin. Too bad alot of gluten-free ones are..not tall and handsome. just. kinda small. WHO WANTS A SMALL MUFFIN?!=( yours look gorgeous!
I love muffins. I have to avoid them because once I start I can’t stop. These are perfect. Blueberry and buttermilk. I can think of no better combination. The only personal addition I’d make to your rules is that I have to eat my muffin tops first. Always.
Gorgeous muffins, buttermilk really does something to the finished product, huh? I like to have butter on my muffins, straight from the oven…even if they don’t really need it. By the way, I could never choose between muffins and cupcakes - I, like you, prefer to have a cake for every mood!
I totally agree with you on all these muffin points. I might just change the coffee to one of Todd’s perfect velvety cappuccino’s, but other than that, I agree!
you know what’s so weird? i never thought of america as ‘king of the muffins’… you learn something new about what others think of your country! now i’ve just gotta learn how to make some.
There are a few places in the US that sell just muffin tops. Those are the best, a when it’s all sugary crust.
These look amazing!! I love a good blueberry muffin and …the color and kind of “rustic” look to these is perfect. My favorite are orange cranberry muffins…to die for!
Do you know the Muffin Man, Muffin man, the muffin man?! - sing this part:) This looks great! I love blueberry muffins! Yours look fantastic!
Diva, they’re beautiful. I bet the buttermilk made them all moist and yummy, too. Oh, for a taste. Sigh.
I got a lovely package in the mail yesterday that made my week
Thank you!
Is there anything you’d like from Malaysia, perhaps?
How beautiful are these? And a bracelet to match
best looking muffin that i have EVER laid eyes on…
