The best part is watching them make it. It's basically sugar that's been heated to the soft crack stage then pulled with corn starch (to keep the strands from sticking together), like noodles. I forget the exact number of times it's pulled but the end result is tens of thousands of thin strands. I love these things. The best part is watching them make it. It appears that the outer layer is sugar that has been stretched and folded upon itself to create a geometric progression, much like dragon's beard noodles.
